I love to try new foods. When I find one with almost no calories , low carb and gluten free I get so excited. House Foods Tofu Shirataki Noodles fit the bill. First you will have to get over the smell. Do not eat them by themselves. Do in a soup or with a sauce. I did mine in a egg drop/ hot and sour soup concoction I made up for lunch. For dinner I used a peanut sauce. It worked well with both recipes. You must follow instructions. Rinse them because they smell like fish. Then put in the microwave for a minute and dry them. I read reviews where people complained of the texture but not a problem for me. Has anybody else used these? What did you think?

I love fresh figs. My friend down the street has fig trees on her ranch. She introduced me to fresh figs a few years ago. Prior to that the closest I’d come to a fig was a newton. I looked up fig recipes because I got a lot of them this year. I was feeling a healthy dessert last night. I found poached figs in wine. I used a Shiraz. This was awesome. I combined wine, honey and cinnamon with a hint of red pepper flakes in medium-sized saucepan and bring to a simmer, then reduce heat. Add figs and poach until soft about 15 minutes. Remove figs and reduce sauce to a syrup consistency. I added a few dark chocolate chips and almonds. It’s kind of my grown up trail mix. I will be making this more often. Mmm!
I’ve been a spinach and okra girl lately but I have to change it up so I won’t get bored. I bought Kale and I’m loving it! I never really ate it growing up. I’m used to turnip and mustard greens. I put in my omelet for breakfast, I ate for lunch with brown rice and chicken apple sausage. Dinner kale sauteed in a tsp coconut oil with garlic and cayenne pepper,grilled chicken breast and sweet potato. I’ve also seen some great recipes for green smoothies and Kale chips. I tried store bought kale chips and they were gross. Fresh is the best. I like that Kale has a peppery taste. It goes good with garlic and of course my favorite red pepper. Whats your favorite kale recipe?
I like to try new recipes especially from other cultures. I found this spice mix for lentils. It was good but I had to change it up. I will eat it for lunch tomorrow with some ground turkey. It always taste better the next day once the spices settle.
Ok I’m still on my kids & veggie thing. One way you can get kids to eat veggies is to let them cook them. My daughter loves veggies. She’s learning to cook them. Our favorite way to cook spinach is to sauté fresh spinach in a little low sodium chicken broth. We just add a salt & pepper. I now enlist my daughter to make it. If I’m making just for me. I add sun-dried tomatoes, garlic and scallions. I didn’t eat spinach as a kid but now it’s my go to veggie. You can eat it raw or cooked. I add it to sandwiches, eggs now smoothies. How do you like to your spinach ?
Ok its recipe Saturday. Its raining in June! That’s rare for California. So I guess I’ll cook today.
Sweet Potato Pancake Recipe
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 tsp baking powder
1 cup mashed sweet potato
1 tsp nutmeg
2 egg whites
1 tsp ginger juice
1 tbsp butter
MIx dry ingredients in one bowl, Wet in the other then mix and griddle. This made 6 pancakes. According to Myfitnesspal.com recipe calculator
for 2 pancakes 238 cals, 44 carbs, 4 g fat, 10g protein. These aren’t supper sweet. I top it with Ginger People Syrup. The pictures are in reverse order. I’m new to this!!
Ok I didn’t plan on posting this till later. I just took the picture. I’m getting the hang of things. This is a picture if breakfast. I call it my semi-homemade like the lady on food network. I had left over sweet potatoes and I added them to Schwann’s grilled mushrooms and onions, threw in a green chili and spinach and sautéed in olive oil. I server with scrambled egg whites ant it was the bomb:)

I love it when the farmers market starts! We have the best vegetables near our town. I live in Central California and we grow everything. Beans, almond,fruit. Today I picked up bok choi. I cut it up steam in wok with low sodium chicken broth. I added a little salt and pepper and it’s on. My daughter gave me a thumbs up. I bought fava beans also. I found a great recipe.
