Shirataki Noodles Mmm!

I love to try new foods. When I find one with almost no calories , low carb and gluten free I get so excited. House Foods Tofu Shirataki Noodles fit the bill. First you will have to get over the smell. Do not eat them by themselves. Do in a soup or with a sauce. I did mine in a egg drop/ hot and sour soup concoction I made up for lunch. For dinner I used a peanut sauce. It worked well with both recipes. You must follow instructions. Rinse them because they smell like fish. Then put in the microwave for a minute and dry them. I read reviews where people complained of the texture but not a problem for me. Has anybody else used these? What did you think?

Poached Figs Anyone?

I love fresh figs. My friend down the street has fig trees on her ranch. She introduced me to fresh figs a few years ago. Prior to that the closest I’d come to a fig was a newton. I looked up fig recipes because I got a lot of them this year. I was feeling a healthy dessert last night. I found poached figs in wine. I used a Shiraz. This was awesome. I combined wine, honey and cinnamon with a hint of red pepper flakes in medium-sized saucepan and bring to a simmer, then reduce heat. Add figs and poach until soft about 15 minutes. Remove figs and reduce sauce to a syrup consistency. I added a few dark chocolate chips and almonds. It’s kind of my grown up trail mix. I will be making this more often. Mmm!

Kale My New Crave!

Kale

I’ve been a spinach and okra girl lately but I have to change it up so I won’t get bored. I bought Kale and I’m loving it! I never really ate it growing up. I’m used to turnip and mustard greens. I put in my omelet for breakfast, I ate for lunch with brown rice and chicken apple sausage. Dinner kale sauteed in a tsp coconut oil with garlic and cayenne pepper, grilled chicken breast and sweet potato. I’ve also seen some great recipes for green smoothies and Kale chips. I tried store bought kale chips and they were gross. Fresh is the best. I like that Kale  has a peppery taste. It goes good with garlic and of course my favorite red pepper. Whats your favorite kale recipe?

Kids Cooking

Ok I’m still on my kids & veggie thing. One way you can get kids to eat veggies is to let them cook them. My daughter loves veggies. She’s learning to cook them. Our favorite way to cook spinach is to sauté fresh spinach in a little low sodium chicken broth. We just add a salt & pepper. I now enlist my daughter to make it. If I’m making just for me. I add sun-dried tomatoes, garlic and scallions. I didn’t eat spinach as a kid but now it’s my go to veggie. You can eat it raw or cooked. I add it to sandwiches, eggs now smoothies. How do you like to your spinach ?

Summer Menu for Weight Loss

Seven-layer salad is an American dish that inc...

Image via Wikipedia

I’m looking for ideas for the summer. I live in a hot part of Northern California. It gets in the hundreds out here. The last thing I want to do is turn on the oven. I like to grill but I burned myself last summer just touching the grill. It wasn’t even on;(. My husband says salads. Ok but I need good salads. I’m not a salad eating babe. I envision a healthy shrimp Louie salad, crab and avocado salad, greek salad. Ok ,now I see this can work for a minute.  Check out Cook This Not That! cookbook. They have a salad matrix. I saw green monster salad dressing on fitandfortysomething.com. This reminds me of college. I lost 30 pounds my last  semester of college. It was kind of like the Jared diet. My boyfriend worked at a pita sandwich shop and I ate pita sandwiches with chicken and olive oil for 2 meals a day. This is getting me excited. Pita Sandwich, I hope I can remember how he made them. They were so good. I’ve already started my smoothies. I’ve seen so many green monster smoothie recipes that will call for a post all buy it self. Well ,I’m off to plan my summer menu. This looks like fun! I would love to hear your summer menu plans.
